  • Fish steaks: You can use any fish of your choice. But the most popular ones used are Hake fish, croaker fish, tilapia, and Titus fish.
  • Pepper mix: Consists of a mixture of tomatoes, red bell peppers called tatashe, onion, and scotch bonnet (Ata rodo).

  1. Prepare the fish: Remove the scales and cut them into steak. Get a bowl of warm water with a few droplets of lemon juice (you can use salt in the absence of lemon juice) and wash the fish thoroughly. Take the fish and place them on a colander to drain out the remaining water.
  2. Marinate (pre-boil) the fish: Place the fish in a pan on medium heat. Add onion powder, garlic granules, parsley ginger powder, and a teaspoon of bouillon powder to the fish and carefully mix them. The quantities of the ingredients are determined by the quantity of fish you are using. Cover it and let it boil for at least 30 minutes. After 30 minutes, pick the fish out and grill it for 20 minutes. If you don’t like grilled fish, you can skip this part.
  3. Cook the stew: Place a pot or pan on medium heat, add vegetable oil and leave it to heat for five minutes. After five minutes, add chopped onions and stir until it is translucent. Next, add grated pepper to the oil and let it heat for 10 minutes.
  4. Season the stew with the seasoning cubes, salt, and bouillon powder. Stir and leave it to cook for additional minutes, until the oil has risen above. When you see the oil floating, it means your stew is ready.
  5. So add the grilled fish to the stew and carefully stir to combine. Add shredded fresh scent leaves or basil leaves to the stew and cover the pot. Reduce the heat to the lowest level and leave it to cook for five minutes. Bring down the pot after 5 minutes. And boom, you are done, and your fish stew is ready to be served.
